Lazy Girl's Gluten Free Pumpkin Bread
On my most recent trip to Trader Joe's (aka heaven), I came across one of the best things I have ever seen there. Gluten free pumpkin bread/muffin mix. I didn't think that was something that would ever happen, finding a gluten free pumpkin mix. But thank goodness I found it at Trader Joe's because that meant it would be guaranteed to be delicious. It is also great for the person who doesn't want to make something from complete scratch, or the person who isn't the world's best baker. I have known people who just don't have the touch for baking, which is more than ok. The recipe only required three ingredients that most people already have in their kitchen; vegetable oil, eggs and water.
I have to admit, I made sure not to get my hopes up about the bread because gluten free baked goods can be super hit or miss, so I have learned to just wait and see how it is. BUT this bread was absolutely amazing! It was fluffy and honestly if you didn't already know it was gluten free, you would never guess it. Even the mix itself, before baking, smells great! You are able to smell all of the wonderful spices in it, then once it is in the oven, the aroma just fills the house. This boxed mix is HIGHLY recommended for everyone out there!
